Banana Blueberry Muffins

Ingredients:
Cooking spray
1 2/3 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp sea salt
3/4 cup sugar
4 Tbsp unsweetened applesauce
1/2 cup egg substitute (or 2 eggs)
3 bananas, peeled and mashed (about 1 1/2 cups)
1/2 cup blueberries (I used frozen) You could also use chopped cranberries or strawberries

Instructions:
Preheat oven to 350F. Coat muffin tin with cooking spray (I used a ceramic muffin pan).

In medium bowl combine flour, baking soda, cinnamon and salt.

In a large bowl beat sugar and applesauce until sugar begins to dissolve (about 2 minutes).

Beat in eggs and mashed bananas.

Stir in flour mixture and fruit with a rubber spatula, making sure you scrape down sides of bowl to moisten everything.

Scoop batter into muffin tin (makes 12 muffins).

Bake until browned - about 25 minutes (a toothpick inserted into center of bread should come out with a few moist crumbs).

Place pan on wire rack to cool for about 10 minutes.  Remove muffins and enjoy!
